Teff-Buckwheat Crepe

INGREDIENTS

  • 1/2 cup ivory teff flour
  • 1/2 cup buckwheat flour
  • 2 eggs
  • 300 ml milk
  • 60 ml water
  • 1 tbsp sugar
  • 2 tbsp butter
  • a pinch of salt
  • butter/salt to grease

INSTRUCTIONS

  1. Add flours, sugar, salt into a bowl. Mix well.
  2. Make a well in the middle of the flour. Add eggs and part of the milk. Mix gently till smooth. Add remaining milk and water. Mix till smooth.
  3. Add butter.
  4. Heat a pan under medium fire and grease with oil. Cook a thin layer of crepe on both sides.

NOTES

Fill with chopped banana and red fruits. Enjoy as a Sunday breakfast or afternoon snack.
