Teff-Almond Cake
INGREDIENTS
- 100g ivory teff flour
- 140 g caster sugar
- 200g ground almond
- 160 ml olive oil
- 3 medium eggs or 4 if the batter feels very dry
- 1 tbsp gluten free baking powder
- zest of one orange
INSTRUCTIONS
- Heat oven at 180 degrees (fan assissted oven).
- Mix oil and sugar till smooth.
- Add eggs and beat with a mixer gently.
- Add ground almond, ivory teff and baking powder together. Mix gently. Add orange zest. Set aside.
- Add batter into a baking tray. Bake for 30 to 35 minutes.
- Enjoy with a cup of coffee or tea.
