Gluten free Teff Chapati

INGREDIENTS
- 200g Teff flour
- 100g Millet flour
- Water for making the dough
- Oil- 1 tbsp
- Chopped spinach or fenugreek leaves- handful
- Salt to taste
INSTRUCTIONS
- Combine the teff flour, millet flour, chopped spinach, water, oil and salt in a large bowl until it makes a firm dough.
- Divide the mixture into 6 pieces and form into 6 balls.
- Take two pieces of parchment paper, some additional millet flour and a rolling pin. Place one dough ball between the two pieces of parchment paper, ensuring they are well floured.
- Use the rolling pin to roll the dough in between the two pieces of parchment paper until it is flat and an even thickness of about ¼ cm.
- Very gently place the flat bread onto a cast iron frying pan or directly onto a cast iron hob/griddle using a spatula and cook for a couple of minutes on either side until brown.
