Teff-Almond Cake

INGREDIENTS

  • 100g ivory teff flour
  • 140 g caster sugar
  • 200g ground almond
  • 160 ml olive oil
  • 3 medium eggs or 4 if the batter feels very dry
  • 1 tbsp gluten free baking powder
  • zest of one orange

INSTRUCTIONS

  1. Heat oven at 180 degrees (fan assissted oven).
  2. Mix oil and sugar till smooth.
  3. Add eggs and beat with a mixer gently.
  4. Add ground almond, ivory teff and baking powder together. Mix gently. Add orange zest. Set aside.
  5. Add batter into a baking tray. Bake for 30 to 35 minutes.
  6. Enjoy with a cup of coffee or tea.
