INGREDIENTS
100g ivory teff flour
140 g caster sugar
200g ground almond
160 ml olive oil
3 medium eggs or 4 if the batter feels very dry
1 tbsp gluten free baking powder
zest of one orange
INSTRUCTIONS
Heat oven at 180 degrees (fan assissted oven).
Mix oil and sugar till smooth.
Add eggs and beat with a mixer gently.
Add ground almond, ivory teff and baking powder together. Mix gently. Add orange zest. Set aside.
Add batter into a baking tray. Bake for 30 to 35 minutes.
Enjoy with a cup of coffee or tea.
